Theme: Berry
Menu: Chopped Fruit Salad
The good thing about summer is - there are lots of beautiful fruits in season, and they are also so very sweet, especially the mangoes.. hmmmmmm…
So I thought - for this week’s theme, what could be more invigorating than Nigella’s chopped fruit salad to be enjoyed on a warm sunny afternoon ;)
Recipe (taken from Nigella Express)
250g strawberries, finely chopped to make a cupful
1tsp pomegranate juice
100g diced mango
1/2tsp lime juice
125g blueberries
150g organic vanilla yoghurt
2tsp mixed seeds (pumpkin, sunflower, sesame)
Method:
Mix the chopped strawberries with the pomegranate juice
Spritz the mango cubes with the lime juice
Using two tumblers or glasses, layer the ingredients: strawberry, mango, blueberries, yogurt and, finally, the seeds. (Note: I actually didnt use the mixed seeds when making this, since I couldn’t find any on my pantry ;p)
