Another one from Kylie Kwong - Soft Boiled Eggs with Spring Onions and Ginger
Recipe (from Kylie Kwong:Simple Chinese Cooking)
Ingredients:
6 free-range eggs
2tbsp light soy sauce
1tbsp ginger julienne
1tbsp white sugar
1/2tsp sesame oil
1tbsp water
1/4cup spring onion (scallion) julienne
1tbsp peanut oil
1 large red chilli, finely sliced on the diagonal
pinch ground white pepper
Method:
Place eggs in a small saucepan of boiling water and cook for about 4 minutes. Remove from the saucepan with a slotted spoon and refresh under cold running water.
Meanwhile, to make the deressing, combine soy sauce, ginger, sugar, sesame oil, water and spring onion in a bowl. Heat peanut oil in a small frying pan until moderately hot, then carefully pour over ingredients in bowl to release the flavours. Stir to combine.
Carefully peel eggs, cut in half and arrange on a platter. Spoon over dressing, sprinkle with chilli and pepper and serve immediately.
